  2. Heat kefir in the microwave or over low heat until warm (do not boil). Gradually pour the fermented milk product into the sugar-egg mixture, continuing to mix the components with a whisk.
  3. Add sifted flour, previously mixed with baking soda, in parts.
  4. Bring the mixture to a smooth and homogeneous state without any flour lumps. Since today we are preparing fluffy pancakes, the dough should be relatively thick so that during frying it does not spread over the pan, but takes the desired shape. The consistency of the dough for kefir pancakes should resemble thick sour cream.

  5. Heat a thick-bottomed frying pan by adding a couple of tablespoons of vegetable oil. Using a tablespoon, scoop up the viscous dough and place it in the form of small cakes on a hot surface. Fry over moderate heat until a characteristic blush appears on the underside.
  6. Using a spatula, we turn the pancakes over and again wait for the “tan” to appear. We cook each batch like this, adding oil if necessary.

Today I will tell you how to prepare lush pancakes with kefir, a step-by-step recipe, with photos, just the way you like it. And he's just amazing! Since I learned this recipe, I have only baked these, all the others have been forgotten as unnecessary.

Lush pancakes (for 10-12 pieces):

  • Wheat flour - 150 g
  • Sour kefir (three days old) - 200 ml. Can be replaced with sour milk, natural yogurt
  • Chicken egg - 1 pc.
  • Melted butter - 25-30 g (about 2 tbsp.)
  • Granulated sugar - 2 tbsp. l.
  • Salt - a pinch
  • Baking soda - 1/2 tsp.
  • Baking powder - 1 tsp.
  • Vanilla extract (optional) - 1 tsp.
  • Vegetable oil for frying

How to make delicious and fluffy pancakes:

Break 1 chicken egg into a bowl (I have a large one, category CO). Add 2 tbsp. spoons of sugar. Stir.

Add 200 ml of sour kefir. If the kefir is fresh, with today’s production date, let it brew. The next day it can be called medium in strength, and on the third day kefir will be ideal for making fluffy pancakes. The content of lactic acid bacteria in it is high, they will raise the dough. Such sour kefir is called strong.

If you can’t bear it, you can cook pancakes with both weak and medium kefir. But please promise me that someday you will also bake with strong kefir that is 3 days (or more) old. The difference will be noticeable!

A substitute for kefir can be sour buttermilk, sour whey, natural yogurt or yogurt.

How to make curdled milk: leave the milk warm for 8-10 hours, then bring it to the desired acidity in the refrigerator (3-5 hours). This “special operation” is called samokvass.

So, 200 ml. Pour kefir into the stirred egg with sugar. Kefir should be warm, but not hot! You can heat it on the stove (without allowing it to boil) or in the microwave in short bursts of 20 seconds, removing and stirring it for more uniform heating.

If you dip your finger in kefir, it should be pleasantly hot, but not scalding (eggs may curdle in hot kefir).

Melt the butter (2 tablespoons) and cool to 50 C or less. You don’t have to heat the butter, but add well-softened butter.

In this recipe, you can replace butter with odorless vegetable oil, but with butter the taste is more delicate.

If you want to add vanilla extract to the dough, do it now, right after the butter.

Mix all dry ingredients in a separate bowl. There will be flour (150 g), baking powder (1 teaspoon), soda (0.5 teaspoon), salt (1/8 teaspoon, pinch). First, we sift everything, then we take a spatula/whisk in our hands and start stirring.

Do you want fluffy pancakes to taste like soda? No. What about the situation when one pancake rises and the other is thin and flat? I'm sure you don't want to. This means that you need to patiently mix all the dry ingredients: the more evenly the soda and baking powder combine with the flour, the more homogeneous the dough will be. Stirred? Great. Pancakes made with kefir will definitely turn out fluffy and beautiful.

Combine dry and liquid ingredients together. But stir very carefully! Literally, in order for all the components to connect with each other, you don’t need to achieve complete homogeneity!

I think this is the main difference between the recipe and all the others. Do you remember the expression “pancake batter”? Liquid dough with small lumps? Now look at the photo to see what kind of pancake dough you should get this time. Also with lumps, but much thicker than usual. The consistency of the dough is viscous, the lumps are large. A dough with such a structure will never spread in a frying pan (it is too thick for this). At the same time, the dough looks tender and fluffy, not heavy at all.

After kneading, cover the bowl with cling film or cover with a towel. Place in a warm, draft-free place for 20-30 minutes.

What happens during this time? Baking soda and baking powder react with kefir (yogurt), resulting in the release of carbon dioxide. It breaks up lumps of flour literally from the inside.

This way the magic bubbles make the pancake dough loose and fluffy.

If you lift the dough on a spoon, it slowly creeps down from it. If you achieve this consistency, everything goes according to plan.

Meanwhile, pour vegetable oil into a frying pan (choose one with a lid and, preferably, one with a thick bottom) for frying.

I use this mold to ensure that the pancakes have an even round shape. But, of course, it is not at all necessary to resort to it.

To spread the thick dough, we need a glass of warm water and a spoon. Before scooping the dough, dip a spoon in water, then scoop up the dough and place it in the hot oil. For a large pancake like mine, you will need a few tablespoons (2-3) per serving.

Fry for 1-1.5 minutes until golden brown on the bottom, then cover with a lid and reduce heat.

For small pancakes that don't use a pan, I use a heaping spoonful of batter. No matter what shape of pancake you fry, be sure to wait until the bottom is golden brown. Then turn over and cover with a lid (reduce heat to low).

Simmer the pancakes under the lid for another 2 minutes so that they are thoroughly baked. Regarding the lid, there are two ways. If you want, you can leave it uncovered, but in this case, pour in more vegetable oil for frying so that the pancakes are half immersed in the oil and bake better; in this case, keep the heat low from the very beginning. If you cover it, you can pour less oil into the pan; it will take a little longer to cook, but the resulting pancakes will not be as greasy as in the first option.

Many people complain that condensation forms on the inside of the lid - small droplets - which drip into the oil and fireworks begin. I keep paper towels in the kitchen for this occasion. As soon as I see droplets, I immediately remove the lid and quickly remove the condensation with a paper towel. Each pan takes one such piece of towel, but the result of baking under the lid is always excellent!

The pancakes under the lid are warm on all sides, bake perfectly, and rise high.

In addition, if a “barrel” of dough suddenly appears in a pancake (this rarely happens, but it happens if you put too much dough on one serving), you can let the pancakes stand in the switched off frying pan under the lid. This barrel will “get ready” in the heat remaining in the frying pan.

I finished frying until the bottom was browned, then left the pancakes in a hot frying pan with a lid.

You can see in the photo: there is no leaked dough left.

If you are going to make sweet pancakes, with cherries or apples, take 4 - 5 tablespoons of sugar, if unsweetened - with herbs, for example, then 1 spoon is enough.

Pour kefir into the eggs beaten with sugar. Sour milk will also work, just try so that the yogurt does not taste bitter.

Pour a teaspoon of soda into kefir. There is no need to extinguish with vinegar. Stir the dough and see how bubbles appear - kefir will do an excellent job of slaking soda even without vinegar!

Now add flour in 2-3 additions, stirring and making sure not to overdo it. The dough for pancakes should be pourable, but not too liquid (otherwise you will end up with pancakes instead of pancakes) - it looks like thick sour cream. There’s no need to add too much flour either – we want the pancakes to be tender and fluffy!

The dough for kefir pancakes is ready.

Now let's fry some pancakes! Pour odorless sunflower oil into the pan. It is convenient to fry pancakes in a ceramic pancake pan - then less oil is required; or in a cast iron frying pan - then you will need more oil, of course, the pancakes should not float in deep fat like donuts, but the frying pan should not be dry either. The oil should cover the pan evenly so that it bubbles along the edges of the pancakes - and the pancakes will turn out fluffy, soft, with a golden crispy crust. With a little practice, you will get the hang of it.

So, pour a tablespoon of dough to make round pancakes. If the dough spreads, it means you need to add a little flour.

Fry without a lid, over medium heat. Soon you will see that the pancakes become holey and lacy - which means it’s time to turn them over with a spatula or fork to the other side.

Turning the pancakes over, fry them a little more on the second side until browned, and then remove them with a spatula onto a dish. And then we serve and eat! After all, as Moomintroll from the wonderful fairy tale by Tove Jansson quite rightly noted, the only way to eat pancakes correctly is to eat them piping hot!
